Also, I know I killed every single enemy and I got the awardement for killing the foes... but the second screen says I killed 16/26. So screen one is correct, but 2 is not.
Yeah, there's a lot of little inaccuracies with the stats right now. A lot of it comes from restarting the level and things not properly being kept track of when that happens, but it should be relatively straightforward to fix.
Helmets can be hidden unintentionally like you guessed -- either by falling into tall grass, falling off the level, or by pulling enemies into hiding places -- so that explains that.
For the gong, you only get a bonus for a perfect hit. The thing on the second page is kinda redundant, it's a holdover from before the awards on the first page existed, so I'll probably remove it.
Lastly, I did have a terrible time in the water. If you surface near the edge of water and jump whilst holding toward the ledge, then you grab the ledge instead of jumping out of the water - probably a good thing if there are enemies nearby. But pushing away from the ledge does not make you let go, pushing up does not make you climb up, and pushing down does not make you let go either. I hit jump and somehow I end up going through the wall. My getting in the wall is countered by a good programmer, as I clip the wall I'm instantly transported up to the grass (and there's a puff of smoke like when I magic transport). Altogether, the water needs a little work to make it smoother.
Those issues are on the fix list. I recently did a total overhaul on the way water works in preparation for a new world type with a lot more swimming, but several water related mechanics completely broke in the process.

There will definitely be real achievements in the final game in addition to the end-level awards!
I did notice one thing that might not be a huge deal to many, but I hope that there can be a control option for the few of us that prefer it. When I was trying to jump up a large vine section in act 4 I was holding 'w' (up for me) and I did not auto grab the next vine at the peak of my jump. I hope this can be an implemented feature - I'm very accustomed to it from other games, but I understand if you want the extra challenge.
Some people do struggle with that, yeah, since they probably expected it to work that way. I think there was a reason I originally didn't have it like that, but I can't remember it now honestly... so I might as well put it back in!
